Purpose of Position
The True South Dining Room epitomises sophisticated elegant dining with an emphasis on the great produce from our district served in truly mouth-watering dishes. 
Work with Olympian and top 20 best young chef in the world, Corey Hume as Executive Chef.    
all over his career Corey has been a representative for New Zealand, Australia and Australasia (as a whole) numerous times and was a member of the Fonterra New Zealand Olympic Squad that competed at the Culinary Olympics in 2016. Corey was the Executive chef for one of the world’s most exclusive and well-regarded lodges, Blanket Bay Lodge Glenorchy. There he and his team cater to some of the most discerning guests who all have the highest expectation in service, wine and of course cuisine.
As an practiced Chef  - you will be joining our team of passionate chefs and assist to deliver outstanding gastronomic practices in our award winning 'True South Dining Room'.
In the absence of the Executive Chef, you will manage the kitchen and ensure a high and consistent standard of food is being delivered at all times.
You’ll be flexible and adaptable in all situations, including being mindful of health and dietary requirements of our guests.
Level of skill, practice and Attributes
   » Have at least 5 years' significant prior practice in high quality properties/restaurants
   » Passion for culinary trends essential
   » Hold a significant industry qualification - Level 5 preferred
   » practice in a variety of different establishments essential
   » capability to build and maintain trusted and respectful work relationships
   » Passion for culinary trends essential
   » Confident in providing input to our Executive Chef, estimating food and labour costs, and ordering food supplies.
   » knowledge of Food Safety and impeccable hygiene practices
   » Assist with the management of departmental Health & Safety
   » knowledge of stock control and practice with menu planning essential
   » Accuracy and an "eye for detail"
   » Be able to work autonomously with excellent time management expertise
   » Effective communication expertise
   » Available to work a variety of shifts including mornings, evenings, weekends and public holidays
